Astragalus comes from the pea family, and has been used for thousands of years in traditional Chinese medicine. Astragalus root in Chinese herbalism is used for increasing the body’s natural resistance and vitality.
Slow Cooker Astragalus Chicken Soup
Astragalus Chicken Soup, is nourishing tonic (tonic - restorative) soup. Which will benefit the body during anytime of the year. Super SIMPLE, as it is slowly cooked in a crockpot over an extended time period
Gathering the Ingredients:
1 pound chicken thigh, preferably from a free-range organic chicken
- (thighs are the best to use but legs and wings will work too)
4 slices of dried astragalus root
- (slices should be 3 inches long and about 1/2 inches wide or more)
8 dried red dates
- (also known as Hong Zao)
1 tbsp dried goji berries
- (also known as Lycium Fruit)
1 cup of filtered water
Salt and Pepper to taste if desired
(green onions finely chopped can be added at the end before serving)
Wash and clean the free range chicken pieces. If any excessive fat is visible, remove before adding to crockpot
Soak the Traditional Chinese herbs - astragalus root, whole red date, and goji berries) for 20 minutes
Cut the red dates into halves and remove the seeds
Place all the ingredients into the crockpot (slow cooker)
Add filtered cold water into the crockpot ensuring the water covers the pieces
Turn to Crockpot onto Low and cook for a minimum of 5 hours but not longer than 8 hours
Test the doneness by sticking a thermometer into chicken - it should read 165 degrees
Remove Astragalus Roots before serving.
This soup is not only beneficial to the body, it is an easy way to utilize the herbs instead of drinking a tea.
