As the photo shows the Rhubarb roots are not uniform in size. They range from 1 inch to 3 inches.
Also as a side note, while on a short day trip, the park was boasting about how large their "Giant Rhubarb" plant was. I thought maybe 3 feet, tall, but to my shock and utter delight there in front of me was a huge Giant Rhubarb, - Gunnera rhubarb, large enough to walk under. It was very spikey and had no smell. The leaves alone were at least three feet wide if not larger, and the stalks were as thick as my water bottle.
