White tea leaves and buds are picked young, before they are fully open, then withered and dried before the oxidation process can begin.  This gives the tea a light body and delicate flavor with floral, fruit, grassy or spicy notes.  White tea does contain caffeine, but a smaller amount than green and black teas, only about 6 - 55 mg per 8 oz. cup.  White tea has a high concentration of antioxidants and other health benefiting compounds to help fight chronic health concerns.
